Product description

An olive oil from a single cultivar, Nocellara dell'Etna. 🫒 It's not a blend: the olives come from a single grove on the slopes of the volcano, they are harvested in October and pressed on the same day.

It is cold-extracted and unfiltered, so it remains slightly cloudy and some sediment settles at the bottom. This is not a defect; it's the pulp that hasn't been removed, and it's also what gives it its full flavor. The acidity is between 0.2 and 0.4 percent.

Product storage

Oil is sensitive to three things: light, heat, and air. Store it in a dark, cool place between 14 and 18 degrees Celsius, and close the cap tightly after each use.

Do not keep it near the stove, which is the most common mistake, and do not put it in the refrigerator: in the cold it becomes cloudy and forms flakes. It is not spoiled, but it serves no purpose.

Being unfiltered, it leaves a deposit at the bottom. This is normal and should not be shaken: just pour without shaking the bottle.
