Wild fennel is an herb that grows by the roadsides in Sicily and ends up in half the island's kitchens. 🌿 Here, it makes up 42 percent, so it's the star, not a background flavor.

Sun-dried tomatoes, at 22 percent, provide the sweetness needed to balance the herb's bitterness, while vinegar and black pepper add the finishing touch. It's the perfect pesto for sardines and anything else from the sea.

Product storage

Before opening, store the jar in a cool, dry place, away from heat sources and direct light. It keeps until the date indicated on the lid.

After opening, keep it in the refrigerator and consume within five days. Level the surface and cover it with a thin layer of oil: it's the air that darkens the pesto, not the cold.

Take it out of the refrigerator fifteen minutes before using it, because when cold it remains hard and doesn't mix well with the pasta.
